Sweet Corn Bread Recipe from Chef Todd i.e. Muffins
Ingredients
- 4 eggs, with yolks separated out
- 1 c thrive instant milk
- 1 t vanilla
- 3⁄4 c butter, melted
- 1 c thrive cornmeal
- 2 c thrive white flour
- 1 1⁄2 c thrive white sugar
- 1 T thrive baking powder
- 1 t thrive iodized salt
Instructions
Preheat oven to 350⁰F.
In a medium-size mixing bowl, combine egg yolks, milk, vanilla, and cooled melted butter and stir. Add dry ingredients to wet ingredients, stirring to incorporate—but do not over mix.
In a separate bowl, beat egg whites until stiff peaks form. Carefully fold egg whites into batter.
Pour into a greased 8×8 pan and bake for 45 minutes. Check with toothpick to make sure it is cooked through.
For muffins scoop batter into prepared muffin tins and bake about 20 minutes. Check with toothpick.
Serving Ideas: Great with dinner or as a side.
Note: For extra flavor, rub top of bread with butter when it comes out of the oven. I did this with my muffins. Who know’s it could have been my secret weapon for all I know, lol!
THRIVE Life: Chef Todd’s Lemon Herb Chicken Penne!
Lemon Herb Chicken Penne

A delicious use of our Whole Grain Penne Pasta!
Prep Time: 20 minutes
Yield:6 servings
Ingredients
- 2 c thrive whole grain penne pasta
- 1⁄2 T garlic
- 2 T olive oil, divided
- 2 T thrive chopped onions (fd)
- 1⁄2 c white wine
- 1 3⁄4 c thrive seasoned chicken slices
- 1⁄2 c thrive broccoli (fd)
- 1⁄4 c thrive green peas (fd)
- 1⁄4 c thrive red bell peppers (fd)
- 1⁄4 c thrive mushroom pieces (fd)
- 1 3⁄4 c water
- 3 t thrive chicken bouillon
- 1 T thrive italian seasoning blend (fd)
- 1 t thrive chef’s choice seasoning blend
- 1⁄2 lemon, juiced
- 1⁄2 c thrive tomato dices (fd)
- 1 c parmesan cheese, shredded
Instructions
Cook and cool pasta (drizzle with additional oil to keep from sticking). Sweat garlic with half of olive oil. Add onions and stir. Add white wine and chicken and let reduce until liquid is almost gone.
Add all remaining vegetables except tomatoes. Add water and bouillon and cook for about 5 minutes. Add pasta and cook another 1–2 minutes. Add all remaining ingredients and toss together.

Chef Todd’s Whole Grain Pasta Salad

A fun cold salad for any occassion!
Prep Time: 30 minutes
Yield: 16 servings
Ingredients
- 3 c thrive whole grain penne pasta ***New Product***
- 1⁄4 c thrive chopped onions (fd)
- 1 c thrive broccoli (fd)
- 1⁄2 c thrive red bell peppers (fd)
- 1⁄4 c thrive green onions (fd)
- 1 3⁄4 c italian dressing
- 1 c summer sausage, diced small
- 1 cn black olives, whole
- 3⁄4 c cheddar cheese cubes
- 1⁄2 c cucumber, diced
Instructions
Cook pasta al dente according to instructions on can. Meanwhile, combine all THRIVE vegetables in a bowl and stir in dressing. Drain pasta and run under cold water to cool. Mix pasta and all remaining ingredients into veggie mixture and stir together. Chill in fridge before serving.

Chicken Stir Fry With Orange Chili Glaze

A healthy family favorite!
Prep Time:30 minutes
Yield: 4 servings
Ingredients
- 2 c water
- 1 c thrive seasoned chicken slices (fd)
- 1⁄2 c thrive red bell peppers (fd)
- 1⁄4 c thrive mushroom pieces (fd)
- 2 T thrive chopped onions (fd)
- 1⁄2 c thrive zucchini (fd)
- 1⁄4 c thrive celery (fd)
- 1⁄4 c thrive broccoli (fd)
- 1⁄4 c thrive green beans (fd)
- 1⁄4 c thrive green onions (fd)
- 2 1⁄2 c additional water
- 1⁄4 t thrive iodized salt
- 2 1⁄2 c thrive instant rice
- 1 t garlic, minced
- 1⁄2 T sesame oil
- 1⁄4 c sweet thai chili sauce
- 1⁄4 c soy sauce
- 1⁄2 c orange juice
- 1 T rice wine vinegar
- 2 T ketchup + 1/2 tbsp. orange zest + 1/4 c. thrive honey crystals
Instructions
Add the 2 cups water to the chicken and vegetables and allow to reconstitute. Bring the 2 ½ cups water and salt to a boil and add rice. Simmer for 2 minutes, turn off heat, and cover. In a wok, sweat garlic and sesame oil together until lightly golden. Add all remaining ingredients for sauce and bring to a simmer. Set sauce aside and reheat wok.
Drain and reserve liquid from vegetable mixture. Add mixture to hot wok and stir fry for a few minutes. Add sauce and remaining liquid and allow to simmer until thick. Serve over rice and sprinkle sesame seeds on top.

THRIVE Life: Chef Todd’s Quinoa Encrusted Chicken Tenders
Quinoa Encrusted Chicken Tenders

This family-friendly chicken recipe uses a quinoa breading!
Prep Time: 1 hour
Yield: 12 servings
Ingredients
- 3⁄4 c thrive quinoa
- 2 t thrive chicken bouillon
- 2 c water
- 3⁄4 t thrive iodized salt
- 3⁄4 t paprika
- 1 1⁄4 t granulated garlic
- 1 1⁄4 t onion powder
- 1⁄2 t cumin
- 1⁄4 t thrive chef’s choice seasoning blend
- 1⁄2 t thrive peppercorn seasoning blend
- 1 c panko bread crumbs
- 12 chicken tenders
- 1⁄2 c thrive scrambled egg mix + 3/4 c. water
- 1 T thrive instant milk + 1/3 c. water
Instructions
Rinse quinoa in a chinois or fine strainer until water runs clear. Bring water and bouillon to a boil. Stir in quinoa and reduce to a simmer; cover and cook for 25–30 minutes. Remove from heat and strain well. Add all other dry ingredients and mix well.
Spread breading on a sheet pan and bake at 325⁰F degree oven until completely dry (about 35 minutes), stirring every 5 minutes with a spatula. Remove from oven and allow to cool. Pulse breading a few times in a food processor to break down quinoa to a medium grind.
Mix eggs and milk together. Lightly coat each chicken breast with the egg wash and then dip into breading and press breading onto chicken. Place chicken on greased baking sheet and bake for 10–15 minutes at 400⁰F or until thermometer reads 165 on the internal temperature is 165⁰.
