THRIVE Life: Lemon Bars ~ Paleo Style



For the crust…

2 cups Almond Flour

1/4 cup Honey or I used THRIVE Honey Crystals – reconstituted

1/2 melted Coconut Oil

2 tbsp Coconut Flour

2 Eggs or THRIVE Whole Egg Powder – reconstituted

For the Lemon Filling…

6 Eggs or THRIVE Whole Egg Powder – reconstituted

1 cup of fresh Lemon Juice – we had a boatload of Meyer’s Lemons from a friends tree

1/2 Honey, again I used THRIVE Honey Crystals – reconstituted

1/2 cup melted Coconut Oil

Dash of Sea Salt

Unsweetened Coconut Flakes for the topping.



For Crust…

1. Preheat oven to 350 degrees

2. In a medium bowl mix together the Almond Flour with the Honey, Coconut Oil, Coconut Flour, and Eggs.

3. After mixed together let sit for about 5 mins.

4. Line a 8×12 baking dish with parchment paper.

5. Spread crust mixture evenly on the bottom of the dish then bake for 20 mins or until the edges are golden brown.

6. Let crust cool completely.

For the Lemon Filling…

1. In a small sauce pan – whisk together the Eggs, Lemon Juice, Honey and Sea Salt over medium heat.

2. Slowly stir in the Coconut Oil and continue to whisk until the mixture is fully thickened like pudding. When its nice and thick remove from heat and let cool.

3. Once cool – pour over the crust and sprinkle top with Unsweetened Coconut Flakes.

4. Place in freezer to let it set and harden. Once set move to the fridge.

5. Enjoy…THRIVE on!
