THRIVE Life: Super Easy Bean Soup Without A Recipe!

THRIVE Bean Soup without a recipe:

I threw this soup together without much thought or a recipe and it’s really good!

2 cups dry mixed beans soaked 4 hours in enough water to cover them. Could use THRIVE Beans if you have them on hand.

Drain the beans and rinse.

Put in stock pot and cover with water enough to also cover 1 smoked ham shank and simmer 2.5 hours.

Remove ham shank and cool then de-bone and add meat back into stock pot.

To finish off the soup I added in the following THRIVE ingredients:

1 cup THRIVE Tomato Dices

1/2 cup THRIVE Tomato Sauce

1/2 cup THRIVE Chopped Onion

1/2 cup THRIVE Chopped Celery

1/2 cup THRIVE Carrot Dices

1/2 cup THRIVE Red and Green Bell Pepper

THRIVE Parsley to taste

2 tsp minced Garlic

1-2 tsp Chile Powder or more to taste, I probably put 1-2 tbsp!

2 Bay Leaves

Salt and Pepper to taste

1 tbsp Cholula Hot Sauce

Let THRIVE ingredients reconstitute in the soup. I actually through them in the pot and let simmer about 20-30 minutes.

The most work I put into this soup was de-boning the ham shank, otherwise it was a snap! Not cutting, chopping, peeling etc.

Great soup the second day and made a quick easy lunch to send with Gordon to work.
